Chef’s Secret – Apple Cider Vinegar

Commonly available White Vinegar is diluted Acetic Acid which is widely used in marination and pickling of fruits and vegetables. Acetic acid is bad for the bones.
Apple Cider Vinegar is made from apples and it contains a small protion of acetic acid and substantial quantities of citric acid, malic acid, minerals like calcium, potassium, magnesium and other fruit sugars which are good for the bones, control BP and Diabetes.
When it comes to culinary, as the level of Acetic Acid is very low the flavours of the spices come to full potential.
As in music we have dominant notes so also in flavours we have dominant notes and Apple Cider Vinegar enhances these notes in the spices. while White Vinegar with its dominant Acetic Acid odour subdues the delicate flavours.
